- 4 cup shredded cheddar
- 2 medium heads cauliflower, cut into florets
- Kosher salt
- 6 oz cream cheese, cut into cubes
- 2 cup shredded mozzarella
- 1 cup heavy cream
- Freshly ground black pepper
- 1 tbsp hot sauce (optional)
- 1/4 cup freshly grated Parmesan
- 1 tbsp extra-virgin olive oil
- 2 tbsp freshly chopped parsley, for garnish
- 4 oz pork rinds, crushed.
Making low carb simple
Start by preheating your oven at 375°. Now take your 9”-x-13” baking dish and butter it. Then you can take a large bowl. Start by adding in your cauliflower with 2 tablespoons of olive oil and you can also season it with salt. Then you can take two large sized baking sheets and spread the cauliflower. Now roast the cauliflower for about 40 mins till they are a nice golden brown.
While your cauliflower is being roasted you can take a large pot. Take your cream and put it in your pot. Bring the cream up to a simmer then bring your heat down to a low flame now you can add in your chesses and allow them to melt.
You can now remove the cream and cheese mixture from the heat and add in hot sauce if you like or you can season it with salt and pepper. Take this mixture and fold in your roasted cauliflower. Taste the dish and add in more seasoning if required.
Now take your mixture and transfer it into a baking dish. Now take a medium sized bowl and add in your parmesan, pork rinds, and oil. Sprinkle this evenly over cauliflower and cheese.
Now you can put in your prepared dish in the oven to bake for 15 minutes. If you like your topping toasted, then turn on the broil to toast the topping further for 2 minutes.
Now you can garnish your prepared dish with parsley before serving.
