Instructions:

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper, then add them to the skillet. Cook until browned on all sides and cooked through. Remove chicken from the skillet and set aside.
  2. In the same skillet, add chopped bell peppers and pineapple chunks. Cook for a few minutes until slightly softened.
  3. Add minced garlic and ginger to the skillet. Stir for a minute until fragrant.
  4. In a bowl, mix coconut aminos, apple cider vinegar, tomato paste, and keto-friendly sweetener. Pour this sauce into the skillet and bring it to a simmer.
  5. In a small bowl, mix arrowroot powder with a tablespoon of water to create a slurry. Add this slurry to the skillet, stirring constantly until the sauce thickens.
  6. Return the cooked chicken to the skillet, coating it well with the sweet and sour sauce. Let it simmer for a few minutes.
  7. Serve the Low Carb Sweet & Sour Chicken over cauliflower rice or your choice of low-carb sides. Garnish with sesame seeds and chopped green onions if desired.
