Ingredients

  • 4 lbs skin-on chicken breasts
  • Freshly ground black pepper
  • 1/2 cup heavy cream
  • 2 large eggs
  • Kosher salt
  • 1 tsp garlic powder
  • 1 1/2 cup finely crushed pork rinds
  • 3/4 cup almond flour
  • 1/2 tsp paprika
  • 1/2 cup freshly grated Parmesan
  • 1/2 cup mayonnaise
  • 1 1/2 tsp hot sauce

Instructions

Instructions are for 2 servings. Please modify as needed.

  1. You can start by pre heating your oven to 400°. Now line a large baking sheet with parchment paper. Take your chicken and remove all excess moisture with paper towels then season it with salt and paper.
  2. Take a shallow bowl and whisk your eggs and then add in your heavy cream and whisk thoroughly. In another shallow bowl add in your pork rinds, flour, parmesan. Paprika, and garlic powder. Season with salt and pepper.
  3. Now start by dipping your chicken in the prepared egg mixture then dip it in the flour mixture. Press it to coat. Then you can place your fully coated chicken on a baking sheet.
  4. Then bake your chicken until it is golden brown for about 45 minutes. Ensure that the internal temperature reaches about 165°.
  5. Meanwhile, make dipping sauce: In a medium bowl, combine mayonnaise and hot sauce. Add more hot sauce depending on preferred spiciness level.
  6. Serve chicken warm with dipping sauce.
