  • 400 gram smoked salmon cut into strips
  • 3 cups rocket
  • 3 cups baby spinach leaves
  • 2 small zucchinis
  • 250 gram punnet cherry tomatoes
  • 2 tbsp white sesame seeds lightly toasted
  • 2 tbsp black sesame seeds lightly toasted
  • 4 tsp olive oil
  • 4 tsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp pepper


Instructions are for 2 servings. Please modify as needed.

  1. For SALAD: Step 1: need to cut zucchini lengthwise then chop it into half.
  2. Step 2: dunk it into boiling water for 30 seconds and then dunk it in iced water to prevent it from cooking any further.
  3. Step 3: drain and set it aside.
  4. FOR Side Dish: Step1: In a container with a screw-top lid, add all the ingredients of vinaigrette ingredients. Screw the lid tightly and shake it vigorously till all the ingredients are combined.
  5. Way to serve: Take 4 plates divide spinach rocket leave among them on the top of this place salmon strips, cherry tomatoes, and zucchini. Now to toping with red wine vinaigrette and scatter with sesame seeds. Serve it immediately.
