  • 1 cup Coconut milk
  • 1 cup Almond milk
  • 2 tbsp vanilla extract
  • 2 tbsp honey or maple syrup


Instructions are for 2 servings. Please modify as needed.

  1. Step 1: In a large bowl pour coconut milk and almond milk. 
  2. Step 2: Pour vanilla extract or if you using vanilla bean, cut it in half and scrape out the seeds and add to the mixture of almond and coconut milk.
  3. Step 3: Add vanilla honey to the mixture and mix it nicely.
  4. Step 4: In the ice cream machine pour all the vanilla mixture and then follow instructions by the manufacturer.
  5. To Serve: Once it is set you can serve it immediately for softly ice cream serving style or put it in the freezer till it hardens up as you like. This ice cream is best at the time of making as ice crystals form once completely frozen and lose their freshly creamy texture.
