- 2 tbsp olive oil
- 1 scallion bunch only green part and chop it fine
- 8 streaky bacon strips, diced
- 2 carrots, cut into batons
- 1 celeriac, cubed
- 2 potatoes, peeled and quartered
- 1.5 kg free-range chicken
- 4 cups low FODMAP chicken stock
- 4 spring thyme
- Handful fresh parsley
- Salt and pepper as taste required
- 300 gram green beans

Instructions

Step 1: Get ready for your oven and preheat it to 350F or 177C.

Step 2: pour olive oil into the large casserole dish which is stovetop proof and put it on medium heat. Later add scallions and bacon in it and cook until the fat is rendered out of the bacon.

Step 3: after rendered out fats add carrots, celeriac, and potatoes and cook it for few minutes.

Step 4: Now place the whole chicken into the center of the casserole dish while the breast side is facing up.

Step 5: Spill chicken stock, add the thyme and parsley, and season with salt and pepper.

Step 6: Cover it with the lid or foil and place it in an oven for 60 minutes or until the chicken is cooked completely.

Step 7: Right before serving steam or boil green beans for few minutes.

Cut chicken into pieces serve each segment with plenty of cooking liquid and green beans on the side.

You can alter half of the chicken stock with a dry white wine only if you can tolerate it. For people who are advance with the SIBO diet and introducing more range of foods back into their diet, this would be suitable for them. In case you can't tolerate potatoes you can omit them without making it any less delicious served it with jasmine or basmati rice at the side.
